Garlic Herb Shrimp And Spaghetti Squash
A quick and flavorful pressure cooker recipe featuring succulent garlic herb shrimp served over perfectly cooked spaghetti squash. This dish is a healthy and satisfying option for a busy weeknight dinner.
Ingredients:
- 1 lb large shrimp, peeled and deveined
- 1 spaghetti squash, halved and seeds removed
- 4 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- Lemon wedges for serving
Instructions:
Add salt, pepper, dried oregano, and dried thyme to the shrimp to taste
Put one half of the spaghetti squash in the pressure cooker with the cut side facing up
Season the shrimp and put them on top of the squash
Add chopped parsley, lemon juice, and cherry tomatoes to the shrimp
Put chicken broth and olive oil into the pressure cooker
Put the pressure cooker on high pressure for 7 minutes with the lid on tight
When youre done, quickly let go of the pressure and carefully open the lid
Shred the spaghetti squash into long strands with a fork
Make sure the shrimp and squash mixture is well mixed by stirring it
Put Parmesan cheese on top and serve with lemon wedges
