Bacon-Braised Brussels Sprouts
Ingredients:
- 1 lb Brussels sprouts, trimmed and halved
- 4 slices of Paleo-friendly bacon, chopped
- 2 cloves garlic, minced
- 1/4 cup chicken broth
- 1 tablespoon coconut oil
- Salt and black pepper, to taste
- Chopped fresh parsley for garnish optional
Instructions:
Add the chopped bacon to a large skillet that has been heated to medium heat
Cook until crispy, then take out and place aside, reserving the skillet with the bacon fat
Melt the coconut oil by adding it to the skillet containing the bacon fat
When the garlic is fragrant, add the minced garlic and cook for about 30 seconds
Season the Brussels sprouts with salt and black pepper after trimming and halving them
Add the Brussels sprouts and saut, stirring occasionally, for approximately 5 minutes or until they begin to brown slightly
After adding the chicken broth, simmer the mixture
Brussels sprouts should braise for ten to fifteen minutes, or until they are soft but still slightly crunchy
Lower the heat to low, cover, and let the sprouts cook
After cooking, take off the lid and allow any liquid to evaporate so that the flavors of the bacon and garlic can caramelize into the Brussels sprouts
After adding the crispy bacon pieces, give everything one more minute or two to combine
If desired, top the hot Brussels sprouts with finely chopped fresh parsley that has been braised in bacon
