Instant Pot Pasta Primavera
A quick and delicious Instant Pot Pasta Primavera loaded with colorful vegetables, herbs, and Parmesan cheese. Perfect for a busy weeknight dinner.
Ingredients:
- 1 lb pasta
- 2 cups broccoli florets
- 1 cup sliced carrots
- 1 cup cherry tomatoes, halved
- 1 bell pepper, thinly sliced
- 1/2 cup sliced black olives
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes
- Salt and pepper to taste
- 2 cups vegetable broth
- 1 cup water
- 2 tbsp olive oil
Instructions:
Put cherry tomatoes, bell pepper, black olives, garlic, oregano, basil, red pepper flakes, salt, and pepper in the Instant Pot along with the pasta
Add the vegetable broth and water and mix them together
Add olive oil on top
Put the lid back on the Instant Pot and set the valve to Sealing
Put the food through 4 minutes of high pressure
When youre done, quickly let go of the pressure
Be careful when you open the lid and stir the pasta primavera
Serve hot, and if you want, top with more Parmesan cheese
