Heirloom Tomato Tart with Goat Cheese and Thyme

This Heirloom Tomato Tart with Goat Cheese and Thyme is a delightful combination of flaky pastry, tangy goat cheese, and juicy heirloom tomatoes. Its an elegant yet simple dish that celebrates the flavors of summer.

Ingredients:

  • 1 sheet frozen puff pastry, thawed
  • 1/4 cup crumbled goat cheese
  • 1 tablespoon fresh thyme leaves
  • 2-3 medium heirloom tomatoes, sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

Preheat oven to 400F 200C

Roll out the puff pastry on a lightly floured surface to fit a baking sheet

Transfer the pastry to the baking sheet lined with parchment paper

Sprinkle the goat cheese evenly over the pastry, leaving a border around the edges

Arrange the tomato slices on top of the goat cheese

Drizzle olive oil over the tomatoes and sprinkle with thyme leaves, salt, and pepper

Bake for 20-25 minutes or until the pastry is golden brown and the tomatoes are softened

Remove from the oven and let cool slightly before serving
