Grammy Cake
Ingredients:
- 2 cups all-purpose flour
- 1 3/4 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 eggs
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 tsp pure vanilla extract
- 1 cup boiling water
- 1 1/2 cups semisweet chocolate chips
- 1 cup heavy cream
- 2 tbsp unsalted butter
Instructions:
Preheat your oven to 350F 175C
Grease and flour two 9-inch round cake pans
In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt
Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients
Mix until well combined
Pour in the boiling water and stir until the batter is smooth
The batter will be thin, but thats okay
Fold in the semisweet chocolate chips
Divide the batter evenly between the prepared cake pans
Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center of the cakes comes out clean
Remove the cakes from the oven and allow them to cool in the pans for 10 minutes
Then, transfer them to a wire rack to cool completely
While the cakes are cooling, prepare the chocolate ganache
In a saucepan, heat the heavy cream and butter over medium heat until it begins to simmer
Remove from heat and add the chocolate chips
Let it sit for a minute, then stir until smooth and glossy
Once the cakes are completely cooled, place one cake layer on a serving plate
Pour a portion of the chocolate ganache over it, allowing it to drip down the sides
Place the second cake layer on top and pour the remaining ganache over the top, letting it cascade down the sides for a beautiful ganache finish
Allow the ganache to set for about 30 minutes before serving
