Balsamic Roasted New Potatoes with Asparagus

These roasted new potatoes with asparagus and balsamic vinegar are a delicious vegan dish that is full of flavor. Balsamic vinegar, garlic, and thyme all have a sour taste that goes well with the soft new potatoes and crunchy asparagus. This side dish is simple and classy, and it goes well with any main dish.

Ingredients:

  • 500g new potatoes, halved
  • 200g asparagus, trimmed
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Instructions:

Warm the oven up to 400F 200C

Olive oil, minced garlic, dried thyme, salt, and pepper should all be mixed together in a large bowl

Cut the new potatoes in half and add them to the bowl

Toss them so that the marinade covers them all evenly

Place the potatoes on a baking sheet that has been lined with parchment paper so that they are all in one layer

Put it in an oven that is already hot for 20 minutes

After 20 minutes, add the potatoes and asparagus that have been trimmed to the baking sheet

Toss the vegetables in any marinade that is still there

The potatoes should be soft and the asparagus should be crisp-tender by the time you take the baking sheet back out of the oven

Take it out of the oven when its done and serve it hot
