Paleo Beer Brined BBQ Chicken

Tender, juicy chicken thighs are enhanced with flavorful paleo-friendly beer and aromatic spices in this recipe for Paleo Beer Brined BBQ Chicken. The dish is then finished with a smoky-sweet BBQ glaze. This is a filling dish that grilling enthusiasts following a paleo diet will love.

Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • 1 bottle of paleo-friendly beer
  • 1/4 cup apple cider vinegar
  • 2 cloves garlic, minced
  • 2 tablespoons coconut aminos
  • 1 tablespoon honey optional, for a touch of sweetness
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • Paleo-friendly BBQ sauce store-bought or homemade

Instructions:

In a large bowl, combine the paleo-friendly beer, apple cider vinegar, minced garlic, coconut aminos, honey if using, smoked paprika, onion powder, garlic powder, salt, and black pepper

Stir until well combined

Add the chicken thighs to the brine mixture, making sure they are fully submerged

Cover the bowl and refrigerate for at least 4 hours or overnight to marinate

Preheat your grill to medium-high heat

Remove the chicken thighs from the brine and pat them dry with paper towels

Grill the chicken thighs for about 6-8 minutes per side, or until they are cooked through and have nice grill marks

During the last few minutes of grilling, brush the chicken thighs with the paleo-friendly BBQ sauce, flipping them once or twice to ensure the sauce caramelizes and coats the chicken evenly

Once the chicken is cooked through and the sauce is caramelized, remove them from the grill and let them rest for a few minutes before serving
