Bliny Russian Crepe-Style Pancakes
Ingredients:
- 2 cups all-purpose flour
- 2 cups whole milk
- 2 large eggs
- 1/4 cup sugar
- 1/4 teaspoon salt
- 1/4 cup melted butter
- 1/2 teaspoon vanilla extract
- Butter or oil for cooking
Instructions:
Whisk the flour, sugar, and salt together in a large bowl
Mix the milk, eggs, melted butter, and vanilla extract in a different bowl using an electric mixer
Mix the dry and wet ingredients together with a whisk until a smooth batter forms
Put a nonstick skillet or crepe pan on medium heat and add a little butter or oil to cover the bottom
To make a thin crepe, pour a ladleful of batter into the pan and swirl it around
After one to two minutes of cooking, the edges should start to come off and the bottom should be a light golden brown color
Change the crepe over and cook the other side for an extra minute or two
Do it again with the rest of the batter, and if necessary, add more butter or oil to the pan
You can top the warm Bliny crepes with sour cream, jam, or fresh berries, or anything else you like
