Vegan Beginners Focaccia with Pesto
Ingredients:
- 3 cups all-purpose flour
- 1 tablespoon active dry yeast
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 cup warm water
- 3 tablespoons olive oil, divided
- 1 cup fresh basil leaves
- 1/4 cup pine nuts
- 2 cloves garlic
- 2 tablespoons nutritional yeast
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions:
In a small bowl, mix together yeast, sugar, and warm water
Let it sit for 5-10 minutes until foamy
In a large mixing bowl, combine flour and salt
Add the yeast mixture and 2 tablespoons of olive oil
Mix until a dough forms
Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic
Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size
Preheat the oven to 400F 200C
Punch down the dough and transfer it to a greased baking sheet
Press the dough out to fit the baking sheet
Cover and let it rise for another 30 minutes
Meanwhile, make the pesto by blending together basil, pine nuts, garlic, nutritional yeast, and olive oil in a food processor until smooth
Season with salt and pepper to taste
Once the dough has risen, use your fingers to make indentations all over the surface
Drizzle the remaining tablespoon of olive oil over the dough, then spread the pesto evenly on top
Bake in the preheated oven for 20-25 minutes, or until the focaccia is golden brown and cooked through
Slice and serve warm
