Roasted Delicata Squash Salad
A colorful and tasty salad with roasted Delicata squash, cherry tomatoes, and a tasty balsamic dressing. Great for a healthy meal that fills you up.
Ingredients:
- 2 Delicata squash, sliced
- 1 pint cherry tomatoes, halved
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 4 cups mixed greens
- 1/4 cup feta cheese, crumbled
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1/4 cup toasted pumpkin seeds
Instructions:
Preheat your oven to 425F 220C
In a bowl, toss the Delicata squash slices with 1 tablespoon of olive oil, salt, and pepper
Spread them on a baking sheet and roast for 20-25 minutes, until tender and slightly browned
While the squash is roasting, prepare the dressing by whisking together 1 tablespoon of olive oil, balsamic vinegar, and honey
Season with salt and pepper to taste
In a large salad bowl, combine the mixed greens and cherry tomatoes
Once the squash is done roasting, let it cool slightly and then add it to the salad bowl
Drizzle the dressing over the salad and toss gently to coat
Sprinkle crumbled feta cheese and toasted pumpkin seeds on top
Serve immediately and enjoy
