Fregola Sarda with Zucchini and Parmesan

This fregola sarda pasta dish tastes great with the nutty pasta, soft zucchini, and salty Parmesan cheese. This recipe is easy and tastes great. Its great for a quick dinner during the week.

Ingredients:

  • 250g fregola sarda
  • 2 medium zucchinis, diced
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Fresh basil leaves for garnish

Instructions:

Bring a pot of salted water to a boil and cook the fregola sarda according to package instructions until al dente

Drain and set aside

In a large skillet, heat olive oil over medium heat

Add minced garlic and diced zucchini

Saut until zucchini is tender and slightly browned, about 5-7 minutes

Add cooked fregola sarda to the skillet with the zucchini and garlic

Toss everything together until well combined

Sprinkle grated Parmesan cheese over the pasta and zucchini mixture

Season with salt and black pepper to taste

Stir until the cheese is melted and everything is evenly coated

Garnish with fresh basil leaves before serving

Serve hot and enjoy
