Cheeseburger Meatball Kabobs

This Cheeseburger Meatball Kabob is a fun take on a regular cheeseburger. They taste just like a juicy cheeseburger and are great for grilling in the summer. Along with pickles, cherry tomatoes, and lettuce, the meatballs are threaded onto skewers to make a full cheeseburger on a stick.

Ingredients:

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped onion
  • 1/4 cup ketchup
  • 1/4 cup shredded cheddar cheese
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 cup diced pickles
  • 1/4 cup cherry tomatoes
  • 1/4 cup lettuce leaves
  • Wooden skewers, soaked in water

Instructions:

In a mixing bowl, combine ground beef, breadcrumbs, chopped onion, ketchup, shredded cheddar cheese, salt, black pepper, garlic powder, and onion powder

Mix until well combined

Form the mixture into small meatballs, about 1 inch in diameter

Thread the meatballs onto the soaked wooden skewers, alternating with diced pickles and cherry tomatoes

Preheat a grill to medium-high heat

Grill the meatball kabobs for 10-12 minutes, turning occasionally, until the meatballs are cooked through and have a nice char

During the last couple of minutes of grilling, add the lettuce leaves to the skewers to lightly wilt them

Remove the kabobs from the grill and serve immediately

Optionally, you can drizzle some additional ketchup or mustard on top for extra flavor
