Cheddar Chicken Quinoa Bake
Ingredients:
- 1 cup quinoa, rinsed and drained
- 2 cups chicken broth
- 2 cups cooked chicken breast, shredded
- 1 cup shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions:
Set the oven temperature to 375F 190C
The chicken broth should be brought to a boil in a medium saucepan
After the quinoa has been rinsed, add it, lower the heat to low, cover it, and simmer it for 15 minutes, or until the liquid has been absorbed
Heat the olive oil in a big skillet over medium-high heat
Add the garlic, bell peppers, and diced onions
Saut until softened, 34 minutes
Add the dried basil, dried oregano, black pepper, and salt and stir
Simmer for two more minutes
Place the cooked quinoa, shredded chicken, and sauted vegetable mixture into a 9 x 13-inch baking dish
Blend thoroughly
Evenly distribute the shredded cheddar cheese on top of the casserole
Bake for 20 to 25 minutes in a preheated oven, or until the cheese is bubbly and browned
Enjoy while hot
