Delicious and adorable Carrot Cake Pops perfect for any occasion. These bite-sized treats combine the flavors of moist carrot cake with a creamy cream cheese filling, all coated in a sweet candy shell.

Ingredients:

  • 2 cups grated carrots
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts or pecans optional
  • 1/2 cup raisins optional
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp orange zest
  • 1 package 16 oz white candy melts or chocolate coating
  • Lollipop sticks

Instructions:

Grease a 9x13-inch baking pan and preheat the oven to 350F 175C

Grated carrots, flour, sugar, oil, eggs, vanilla extract, baking soda, baking powder, cinnamon, and salt should all be combined in a big bowl

Blend until thoroughly blended

If using, mix in chopped almonds and raisins

When a toothpick inserted into the center comes out clean, bake the batter for 25 to 30 minutes in the baking pan that has been prepared

Permit the cake to cool fully

Cream cheese, powdered sugar, and orange zest should be combined smoothly in a different bowl

Once the carrot cake has cooled, crumble it into fine crumbs and thoroughly combine it with the cream cheese mixture

Using a baking sheet lined with parchment paper, shape the mixture into small cake balls

Place in the fridge to chill for a minimum of one hour

As directed on the package, melt the chocolate coating or candy melts

Each lollipop stick should be dipped into the melted candy coating before being inserted into a cake ball

Make sure the cake ball is completely covered by dipping it into the melted coating

Let extra coating fall off

Return the coated cake pops to the baking sheet that has been lined, and allow them to set

Your Carrot Cake Pops are ready to eat once the coating hardens
