When you mix perfectly cooked lobster meat with a creamy sauce flavored with Parmesan, you get a dish that is both fancy and comforting. Ingredients:

  • 2 lobsters about 1 1/2 pounds each, cooked and meat removed
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 onion, finely chopped
  • 1/2 cup dry white wine
  • 1 cup seafood stock
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions:

Chop the lobster meat into bite-sized pieces and set aside

In a large skillet, heat olive oil over medium heat

Add minced garlic and chopped onion, saut until softened, about 3-4 minutes

Deglaze the skillet with white wine, scraping up any browned bits from the bottom of the pan

Add seafood stock and bring to a simmer

Let it cook for about 5 minutes to reduce slightly

Stir in heavy cream and grated Parmesan cheese

Simmer gently until the sauce thickens, about 5-7 minutes

Season with salt and pepper to taste

Add the chopped lobster meat to the sauce and heat through, about 2-3 minutes

Garnish with chopped fresh parsley before serving

Serve hot over pasta or rice
